That's probably to counterbalance the weight of the keg he is carrying.

It must have been slippery. I want to see the take before where he came around the corner and just completely wiped out

I think those mutton chops are kinda like a cheetah's tail. The wind resistance helps him keep his balance depending on how he turns his head.
He's swinging that arm wide enough to strike a pose at the end of the catwalk too.
